Fried eggplant is one of the most popular vegetables among the Indians. And, the dish I am telling about the Specially more popular among the East Indian people. This dish can be taken with Rice, chapatis or rotis.
Difficulty Level: Very Easy
Ingredients:
Process
1. Take the sliced eggplants and mix them with the Cornflour (or Maida), baking soda, salt, red chili powder, kalonji seeds, green chilli pieces, turmeric powder and a little amount of vegetable oil.
2. Keep it aside for minutes.
3. In the same frying pan, add oil. Let it be warm.
4. Once it is hot, add the eggplant pieces and fry them, till They turn golden brown.
5. Add a small amount of fresh lemon juice just before serving.
6. Serve them as appetizer or serve with Rice with roti / chapati.

- 4-6 tbsp cornflour / Maida (white flour) (To make the crispy fries a one)
- A pinch of baking soda

- 1 large / 2 medium Green Chili - chopped
- 1/2 tsp black onion seed (Kalonji or Nigella )
- Turmeric powder
- Salt to taste.
- Vegetable oil.
- A small amount of fresh lemon juice.
